Low Cal High Taste Portobella Panini

Now that I am a Curvy Girl in Pescatarian World I am finding a bunch of recepies that replace meat entree’s I like with vegetables or some form of fish. No lets be honest, my palate is used to greasy, processed, cheese covered goodness. It’s also used to a very fine vintage Chianti, Escargot with a buttery garlic finish and Foie Gras (which I actually detest!). Now that my Curvy behind is on a tight budget and Pescatarian Diet I have searching high and low for cheap and tasty meals. I found this recipe online and loved how filling it is! Portobella Panini works well as a beefy thick texture replacement. Its great in a Steak situation as well!

1/4 cup balsamic vinegar
1 tablespoon olive oil
1 garlic clove, minced (or 1/3 tblspn)
1 red bell pepper, seeded and sliced
1 yellow bell pepper, seeded and sliced
4 portobello mushroom caps
Cooking spray
1/3 cup chopped fresh basil
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
4 (2-ounce) Kaiser rolls (I used Gluten Free)
1/2 cup (4 ounces) soft goat cheese
